Five Minute Low Carb Breakfast Burrito

- 1 U Flatout Light wrap
- 1/2 cup spinach
- 1 U scallion, chopped
- 1/4 cup cherry tomatoes, chopped
- 1 U egg
- 2 U egg whites
- 2 tbsp. reduced fat shredded cheddar cheese
- Salt and pepper
- 2 tbsp. salsa

Spray a bowl or mug with cooking spray. Add the vegetables and microwave for 1 minute.
Remove from the microwave and add the eggs. Season with salt, pepper, and any other spices. Microwave for 1.5-2 minutes until fluffy.
Meanwhile, spread the cheese on the tortilla. When the eggs are done, place the tortillas and cheese in the microwave for 30-60 seconds until warmed.
Add the eggs to the tortilla, add some salsa, and wrap.
