I can't stop eating this cauliflower. We have had it three nights in a row as a happy hour snack, side dish, and taco filling and I don't see that stopping any time soon. The sweet and spicy and creamy thing going on in the dish is too good to top eating. It's inspired by a traditional firecracker or bang bang chicken dish but made with cauliflower instead for a meatless version. For vegans, you could use a vegan mayo to easily make the recipe vegan friendly. Just make sure there are no animal products in the sweet chili sauce you purchase. There normally isn't but I have seen a few with fish sauce in the ingredients.

Preheat the oven to 400 degrees. Spray the cauliflower with cooking spray and season with salt and pepper. Place on a baking sheet (you may need more than one) in a single layer. Bake for 20 minutes until tender crisp.
Meanwhile mix together the sweet chili sauce, Sriracha, mayonnaise, honey, and garlic powder.
Toss the cooked cauliflower with the sauce.
