Everyone has there own version of a fiesta or Mexican style rice. I like mine with black beans, lime juice, and pico de gallo, which sometimes I make and sometimes I just buy. It makes a perfect side dish for chicken, steak, or fish and is great for lunch or dinner. Mix some together with chicken breast, your favorite lettuce, and a great salsa and you have the perfect Mexican salad.
