Everyone has there own version of a fiesta or Mexican style rice. I like mine with black beans, lime juice, and pico de gallo, which sometimes I make and sometimes I just buy. It makes a perfect side dish for chicken, steak, or fish and is great for lunch or dinner. Mix some together with chicken breast, your favorite lettuce, and a great salsa and you have the perfect Mexican salad.

Ingredients

  • 1 cup cooked brown rice
  • 1 cup canned black beans, rinsed
  • 1 cup pico de gallo
  • 1 tbsp lime juice
  • 1/4 tsp salt

Cook rice according to package direction with chicken broth.

While still warm in the pot, mix in black beans, lime juice, and pico de gallo. Warm for 1-2 minutes and serve.
