I am always looking for new ways to make low carb side dishes since it can get a bit challenging. Simple veggies get boring night after night. One of my favorite carb heavy side dishes is fiesta rice made with brown rice, black beans, and pico de gallo. It's quick, filling, and delicious. So using that as an inspiration, lately I have been making a lower carb version with either edamame or black soy beans. Easy and filling.

Heat edamame until warmed through.
While still warm in the pot, mix in the ime juice and pico de gallo. Warm for 1-2 minutes and serve.
