Eggnog is kind of a funny thing. People usually either love it or hate it. Personally I fall somewhere in between. My Aunt makes a killer eggnog, more aptly called booze pudding. It is dreamy and dream inducing after a couple glasses. It’s definitely my favorite rendition but not diet friendly by any means.
The store bought stuff, I fall squarely in the middle. Doctored up with enough stuff it can taste good, but on it’s own I am normally not a fan. That is unless it is being used in either coffee or baked goods. Store bought eggnog in baked goods brings just the right amount of spice and richness. I have started using it to replace milk in lots of recipes and loving it. Try it in oatmeal, you won’t be disappointed. And in this bread pudding it works perfectly and couldn’t be any easier. Just four ingredients and about 2 minutes of prep.
