My go to order when I go out to breakfast is an egg white omelet packed with whatever veggies are available so it's surprising that I don't make more of them at home. Since making a folded stuffed omelet can be a little tricky to make at home, I usually make this simpler version which turns out more like a frittata than a true omelet. The veggies are cooked in the pan, mushrooms in this case, and then the eggs are added on top. Then you cover it and let it cook for 4-5 minutes. Easy and delicious.

Ingredients

US METRICS
  • 2 tsp. olive oil
  • 2 cups mushrooms
  • 4 U green onions, chopped
  • 4 tbsp. basil
  • 2 cups egg whites
  • Salt and pepper

Add the olive oil to the pan over medium heat. Add the mushrooms, salt, and pepper. Cook for 5-8 minutes until tender and browned.

Add the green onion and cook for 1 minute.

Add the basil and egg whites. If desired, add cheese as well. Cover and cook for about 5 minutes until cooked through.
