Add the olive oil to the pan over medium heat. Add the mushrooms, salt, and pepper. Cook for 5-8 minutes until tender and browned.
Add the green onion and cook for 1 minute.
Add the basil and egg whites. If desired, add cheese as well. Cover and cook for about 5 minutes until cooked through.
