For me cucumber and mint is like peanut & jelly, peas & carrots, peaches & creams. It is just a pair that naturally works and that I love, but one that I usually reserve for cocktails. Cucumber mint moitos? I’m in! A cucumber mint gimlet? Get out of town! So a few mornings ago I decided to take my beloved pairing and try it out in a green smoothie paired with melon, green apple, and a bit of spinach. The result was surprisingly delicious and refreshing. It’s perfect to cool down on a hot day and is a happy addition to my summer smoothie rotation.

Ingredients

US METRICS
  • 1 cup cucumber, peeled and seeded (English cucumber can stay whole)
  • 1 cup cantaloupe (or other melon), chopped
  • 1 cup fresh spinach
  • 1 U granny smith apple, chopped
  • 1/8 cup fresh mint leaves (or more to taste)
  • 1 cup unsweetened almond milk
  • 1 U Ice

Blend everything until smooth. For older or less powerful blenders, microwave the apple for 2 minutes first.
