I really want to start a garden a city garden I guess or one of those cool wall hanging gardens. Thinking about all the great things I would grow in said garden, I began to think about English cucumbers and was inspired to create this salad. It is simple and refreshing and combines too of my favorite things cucumber and dill. It’s perfect as a side dish and works well with almost anything.

Ingredients

  • 2 U English cucumbers, sliced very thin
  • 1/2 U red onion, sliced thin
  • 1 tbsp salt
  • 1/2 cup white vinegar
  • 3 tbsp sugar (Stevia for low carb)
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste

Directions

  1. Slice the English cucumbers very thin and place in a colander or mesh strainer. Toss with 1 tbsp of salt and let sit for 20 minutes. This will help remove some of the water. Dry well.
  2. In a bowl, whisk together the dill, white vinegar, salt, pepper, and sugar. Add the red onion and cucumbers and mix well. Let sit for at least 15 minutes before serving.
