Low carb side dishes can get boring so it is always a good idea to add some new recipes to your repertoire. My favorite way to do this is to make a twist on a classic side like cauliflower puree. To switch things up we are adding spinach, cream cheese, and Parmesan cheese to make a terrific side.
Creamy Spinach Cauliflower Puree

Bring a salted pot of water to a boil. Add the cauliflower and boil until soft. Drain and save ½ cup water.
Blend with cream cheese, spinach, Parmesan cheese, salt, and pepper until just combined. If needed, add 1-2 tbsp. cooking liquid at a time to help blending.
