Since my family started eating clean, I have been slowly replacing our normally chemical laden staple foods with homemade ones. It's nice to know exactly what is going in the foods my family eats. This mayo is rich and creamy and my family likes it more than any brand on the market.

Because this recipe has raw egg, make sure you keep it refrigerated. As a rule, I the expiration date on the egg carton as the expiration date for the mayo.

  • 1 cup vegetable oil (or canola oil)
  • 1 U egg
  • 1 tsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 U Pinch salt

Directions

  1. Crack egg into a glass jar. Add oil, Dijon, vinegar and salt.
  2. Submerge immersion blender into liquid. Blend and watch the mayo grow up the sides of the jar. Once it comes to the top, plunge blender up and down in cream until no oil is left on the top.
  3. Refrigerate in a jar with a tight lid. Use expiration date from the egg carton as date for your mayo.
