- 1 tbsp butter
- 1 U onion, minced
- 2 U cloves garlic, minced
- 16 oz fresh spinach
- 1/2 cup half and half
- 2 tbsp Parmesan cheese
- 1/4 tsp nutmeg
- 1/4 tsp black pepper
- salt to taste

Heat the butter over medium heat in a skillet.
Add the onion and garlic and cook for 4-5 minutes until just translucent.
Add the spinach and stir until wilted.
Add the half and half, cheese, nutmeg, salt, and pepper.
Warm everything and serve. For a more classic creamed spinach, bake at 400 degrees for 15 minutes.
