Creamed spinach is a classic holiday dish but it's easy enough to make it for any dinner. This version is lightened up from the traditional cream laden recipes and uses just enough cheese and and cream to get the right consistency without completely overpowering anything. You can use fat free half and half or nonfat canned evaporated milk for a lower fat count, but I prefer the real thing. And don't skimp on the nutmeg, it's the secret to a classic creamed spinach dish.

Ingredients

US METRICS
  • 1 tbsp butter
  • 1 U onion, minced
  • 2 U cloves garlic, minced
  • 16 oz fresh spinach
  • 1/2 cup half and half
  • 2 tbsp Parmesan cheese
  • 1/4 tsp nutmeg
  • 1/4 tsp black pepper
  • salt to taste

Heat the butter over medium heat in a skillet.

Add the onion and garlic and cook for 4-5 minutes until just translucent.

Add the spinach and stir until wilted.

Add the half and half, cheese, nutmeg, salt, and pepper.

Warm everything and serve. For a more classic creamed spinach, bake at 400 degrees for 15 minutes.
