For years I thought creamed corn was about the first thing I could think of. I couldn't understand why anyone would prefer creamed corn to regular corn. However I recently learned that the reason I has such ill feelings about creamed corn was that I had only tried the canned version. The real thing? Wow! Mind blown, and then I saw how many calories it had. Eek! There was so much butter and cream that if was hard to even consider it a vegetable. So I set out to make a healthier version and came across a delicious recipe with garlic and spinach from Rachel Ray. Adjusting that by using nonfat evaporated milk instead of cream and using a bit less version, this version is sure to please. It's best with fresh corn but canned or frozen will work as well.

Ingredients

US METRICS
  • 1 tbsp. butter
  • 3 cups corn (fresh, defrosted frozen, or canned)
  • 2 U garlic cloves, minced
  • 1/2 cup canned nonfat evaporated milk
  • 8 oz. fresh spinach
  • salt and pepper

Melt the butter over medium heat. Add the corn and cook for 5 minutes.

Add the garlic and cook until fragrant, about 1 minute.

Add the evaporated milk, salt, and pepper. Cook for about 15 minute, stirring occasionally until creamy.

Add the spinach and cook about 4-5 minutes until wilted. Season with salt and pepper if needed.
