Melt the butter over medium heat. Add the corn and cook for 5 minutes.
Add the garlic and cook until fragrant, about 1 minute.
Add the evaporated milk, salt, and pepper. Cook for about 15 minute, stirring occasionally until creamy.
Add the spinach and cook about 4-5 minutes until wilted. Season with salt and pepper if needed.
