As the mornings start to get a little colder and fall begins to really get into full swing, I find myself craving coffee and baked goods in the morning. For me this usually ends up meaning baked oatmeal or this week this lovely apple coffee cake. I debated what exactly to call it. It definitely isn’t a cake since it’s not overly sweet, but it’s not really a bread either, and it has a yummy cinnamon sugar topping so I ended up with coffee cake. And the batter is made with cream cheese and apple sauce which add lots of moisture without adding fat from butter or oil. It’s a delicious little bite of fall.

Ingredients

  • 1 cup sugar, divided
  • 6 oz. fat free cream cheese, room temperature
  • 1/2 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 2 U large eggs
  • 3/4 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 3 cups apples, chopped and peeled
  • Cooking spray

Directions

  1. Preheat oven to 350 degrees.
  2. Beat together 3/4 cup sugar, cream cheese, and vanilla until well blended and creamy. If you are using a mixer do this on medium speed. If it is by hand, it may take a beat longer.
  3. Add the eggs one by one to the mixture, beating well. Then add the applesauce and beat until everything is well blended, about 1 minute.
  4. In a small bowl combine 1/4 cup sugar with the 2 tsp of cinnamon. Toss the apples with 3 tbsp of this mixture. Set aside.
  5. Combine your dry ingredients flours, salt, and baking powder. Then slowly add to the wet ingredients and stir/beat until just combined. Fold in the apples.
  6. Spray a round cake pan (8-9 inches) with cooking spray and pour in the cake batter. Sprinkle the remaining cinnamon and sugar on top.
  7. Bake for 60 minutes or until the cake is cooked through completely.
