- 1 cup sugar, divided
- 6 oz. fat free cream cheese, room temperature
- 1/2 cup unsweetened applesauce
- 1 tsp vanilla extract
- 2 U large eggs
- 3/4 cup all-purpose flour
- 3/4 cup whole wheat flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 2 tsp cinnamon
- 3 cups apples, chopped and peeled
- Cooking spray
Preheat oven to 350 degrees.
Beat together 3/4 cup sugar, cream cheese, and vanilla until well blended and creamy. If you are using a mixer do this on medium speed. If it is by hand, it may take a beat longer.
Add the eggs one by one to the mixture, beating well. Then add the applesauce and beat until everything is well blended, about 1 minute.
In a small bowl combine 1/4 cup sugar with the 2 tsp of cinnamon. Toss the apples with 3 tbsp of this mixture. Set aside.
Combine your dry ingredients flours, salt, and baking powder. Then slowly add to the wet ingredients and stir/beat until just combined. Fold in the apples.
Spray a round cake pan (8-9 inches) with cooking spray and pour in the cake batter. Sprinkle the remaining cinnamon and sugar on top.
Bake for 60 minutes or until the cake is cooked through completely.
