I have a close friend who recently became a vegetarian and one of the things she misses the most is chicken and tuna salad sandwiches. In the past she used to make up a big batch of either tuna or chicken salad with lots of veggies and use it for sandwiches and salad throughout the week. Since giving up meat, she hasn't been able to find an alternative that she likes as much. We have bee experimenting together to find a strong replacement. We tried tofu, but it was a bit too soft. We tried tempeh, but it was too chewy. Black beans? She didn't love the flavor combination. However chickpeas turned out great. This version adds lots of crunch with celery, red onion, and apple and just enough sweetness and tartness from the dried cranberries.

Ingredients

  • 14 oz. canned chickpeas, drained and rinsed
  • 2 tbsp. low fat mayonnaise
  • 4 tbsp. nonfat Greek plain yogurt
  • 1/2 cup celery, chopped
  • 1/4 cup red onion, minced
  • 1 tbsp lemon juice
  • 3 tbsp. dried cranberries
  • 1 U apple, diced
  • Salt and pepper

Directions

  1. Mash the chickpeas using a fork or potato masher until beginning to combine but they still have some texture.
  2. Combine all the ingredients. Season with salt and pepper.
