I have completely mixed feelings about Valentine’s Day, and I am well aware I am not the only one. Part of me thinks it’s a bit of an invented holiday and that we should all celebrate our love for significant others, friends, and family everyday. But the other part of me can’t wait to decorate, eat and analyze way too many conversation hearts, indulge on chocolate and hearts and sprinkles, and finally make the time to make all those adorable homemade cards I think about but never find the time to create. Eeek….what do you think? However no matter where you fall on the love/hate Valentine’s Day spectrum, you should find a friend or loved one and make these cupcakes for two. Indulgent chocolate, almond cream cheese frosting, and built in portion control. Valentine’s Day or not, they make a special and yummy dessert.
