These may be the best roasted carrots I have ever had. The spicy chili powder, smoky cumin, tangy lime juice, and fresh cilantro all paired with the sweetness and nuttiness of a roasted carrot is out of this world good. Preheat the oven to 400 degrees.
Toss the carrots with olive oil, chili powder, cumin, salt, and pepper. Lay flat on a prepared baking sheet.
Roast for 25-30 minutes until lightly brown and tender, stirring once. Remove from oven and toss with lime juice and cilantro.
