These may be the best roasted carrots I have ever had. The spicy chili powder, smoky cumin, tangy lime juice, and fresh cilantro all paired with the sweetness and nuttiness of a roasted carrot is out of this world good. We literally ate the whole sheet pan full before anyone touched anything else on their plates. So if you are looking for a recipe to get your loved ones to eat their veggies, this is it.

Ingredients

  • 1.5 lbs carrots, chopped
  • 1 tbsp olive oil
  • 3/4 tsp chili powder
  • 3/4 tsp cumin
  • 2 tbsp lime juice
  • 2 tbsp cilantro

Directions

  1. Preheat the oven to 400 degrees.
  2. Toss the carrots with olive oil, chili powder, cumin, salt, and pepper. Lay flat on a prepared baking sheet.
  3. Roast for 25-30 minutes until lightly brown and tender, stirring once. Remove from oven and toss with lime juice and cilantro.
