You will love these ooey, gooey Chicken Cheese Steak Tacos packed with grilled chicken, peppers, onions, and tons of melted cheese.
Being on the East Coast always makes me crave a really good cheese steak. I just haven't been able to find one that gets close on the West Coast. And even though I always let myself have at least one while traveling, they are just too heavy to eat all the time so I couldn't have been more excited when I accidentally threw together this recipe last week.
Here's how it went down. The other day we were looking for a quick lunch while making myself some quick chicken tacos with leftover grilled chicken and roasted veggies, it dawned on me that a cheese steak inspired taco would be delicious. So I tossed together the grilled peppers, onions, leftover grilled chicken, and lots of mozzarella and immediately loved the results. Really - what's not to love? Topped with some fresh salsa or eaten on their own, they are one seriously delicious meal.

If the chicken breasts are very large or thick, cut them into strips or thinner cutlets so they cook more quickly and evenly.
Brush the chicken breasts with olive oil and sprinkle with garlic powder, salt, and pepper. You can also add some red pepper flakes if you like things spicy. Spray the peppers and onions with cooking spray and sprinkle with salt and pepper.
Place chicken and vegetables on the grill. Cook for 4-6 minutes on each side or until chicken is cooked through and vegetables are tender.
Roughly chop the chicken and vegetables. Toss with cheese and if needed, place in microwave to melt cheese. You can also place it on a piece of foil sprayed with cooking spray on the grill to melt the cheese.
Heat the tortillas on the grill until warm and fill with chicken mixture.
