Who doesn't love a good cheese steak? But I am all set with over 750 calories in one sandwich. Many clock in at over 1000 calories, especially the particularly delicious ones from Mom & Pop sub shops. So rather than consume more than half my daily calories in just one sandwich, I like to make this lightened up version with chicken and a homemade cheese sauce. It's packed with flavor and veggies to bulk it up. Then serve it up on a toasted light sub roll and everyone is sure to be pleased.

Ingredients

US METRICS
  • 1 lb. boneless skinless chicken breast, cut into strips
  • 2 tsp. olive oil
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 U green pepper, sliced
  • 1 U red pepper, sliced
  • 8 oz. mushrooms
  • 1 U sweet onion, sliced
  • 1/2 tbsp. butter
  • 1/2 tbsp. flour
  • 3/4 cup reduced fat shredded cheddar cheese
  • 2/3 cup skim milk
  • 4 U light hoagie rolls

Season chicken with salt and pepper.

Heat a skillet over medium heat with olive oil. Add the chicken and cook for 8-10 minutes or until cooked through completely. Remove chicken and set aside.

Add peppers, onions, and mushrooms and cook for 6-8 minutes. If burning, add 1-2 tbsp. of water.

Add the butter to a small saucepan. Once melted, whisk in the flour and cook for 2 minutes until lightly browned.

Add the milk and bring to a simmer. Once bubbling and thickened, reduce the heat to low and stir in the cheese.

Toast the rolls and then divide the chicken and vegetable mixture evenly among the rolls. Top with cheese sauce.

Great taste. Loved the cheese sauce. Next time we are going to shred the chicken so make for a more uniform bite.
