Chicken Cheese Steak Sandwiches

- 1 lb. boneless skinless chicken breast, cut into strips
- 2 tsp. olive oil
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 U green pepper, sliced
- 1 U red pepper, sliced
- 8 oz. mushrooms
- 1 U sweet onion, sliced
- 1/2 tbsp. butter
- 1/2 tbsp. flour
- 3/4 cup reduced fat shredded cheddar cheese
- 2/3 cup skim milk
- 4 U light hoagie rolls
Season chicken with salt and pepper.
Heat a skillet over medium heat with olive oil. Add the chicken and cook for 8-10 minutes or until cooked through completely. Remove chicken and set aside.
Add peppers, onions, and mushrooms and cook for 6-8 minutes. If burning, add 1-2 tbsp. of water.
Add the butter to a small saucepan. Once melted, whisk in the flour and cook for 2 minutes until lightly browned.
Add the milk and bring to a simmer. Once bubbling and thickened, reduce the heat to low and stir in the cheese.
Toast the rolls and then divide the chicken and vegetable mixture evenly among the rolls. Top with cheese sauce.
