If you came to my house on any given morning, you would likely see me running around like a crazy person and making some version of this microwave egg mug. Being someone who needs protein at breakfast so I am not starving am hour later, eggs are my go-to but I don't always have time to pull out a frying pan and make a yummy veggie scramble or omelet. So on those busy mornings I reach for a three minute egg mug. It starts with veggies, in this case a handful of mushrooms and tomatoes. The veggies are quickly cooked until tender. Then you scramble in the eggs, some cheese, salt, pepper, and any spices/herbs. Back into the microwave for two minutes and breakfast is ready. It's filling, healthy, and delicious.
