Spray a mug with cooking spray. Add the egg and egg white and whisk together. Add in the chopped Canadian bacon, spinach, and cheese.

Microwave on high for 2-2:30 minutes until puffed up and cooked through.

When I first saw microwaving in a coffee mug, I wondered whether it was genius and "why didn't anyone think of this before" or "eh, yeah, not so good--no wonder I've never heard of it". It was decidedly the former!. My favorite version is adding a few quartered cherry tomatoes and with just any kind of shredded or crumbled cheese I have on hand. I now make this one or twice a week, including for work. I just put the egg mixture in a 1 cup size food storage container and bring a can of cooking spray with me. So good!
