One of very first things I started doing when meal planning was to focus on breakfast.  When you first start out, it can be overwhelming to try and plan out all your meals (or even half your meals!)  so starting with breakfast felt entirely manageable for me at the beginning.  I also found it truly set the tone for the rest of my day. If I started with a healthy choice this led to better decisions all day.  Win-win.  back to meal planning, since I really love eggs, egg mugs and muffins were something I leaned on often.  Not only are they easy, they are portable, packed with protein, and really versatile.  This version uses Canadian bacon as a crust (turkey or ham would work too!) and then a mini quiche is baked inside.  Not only are they delicious, they're pretty cute too.

Ingredients

US METRICS
  • 12 U slices Canadian bacon
  • 1 tsp. olive oil
  • 1 U red pepper, diced
  • 1 U green pepper, diced
  • 1/4 cup green onions, chopped
  • 6 U eggs
  • 6 U egg whites
  • 1/4 cup nonfat milk
  • Salt and pepper

Preheat the oven to 400 degrees.

Heat a non-stick skillet over medium heat with olive oil. Add the peppers and green onions and cook until soft and beginning to brown, about 5-7 minutes. You can skip this step if you don’t mind the veggies on the raw side.

Whisk together the eggs, egg whites, milk, salt, and pepper. Add the vegetables.

Spray a 12-hole muffin tin with cooking spray. Press one piece of Canadian bacon into each hole. Pour in the eggs. It’s fine if they spill out of the Canadian bacon cups a bit.

Bake for 18-22 minutes or until cooked through.

This is a quick, easy and delicious breakfast to fill you up so you can start your day. You can easily add or substitute your favorite veggies to fit your family's taste. My daughter loves to eat this breakfast before a big test or a sporting event.
