Today's recipe is a bit of a mix between a latke and an omelet. It's packed with cabbage and then loosely held together with egg and is one of my favorite things to serve with Asian meals. Sometimes I add a bit of soy to the cabbage to add some earthy flavors.

  • 1 U small cabbage
  • 2 U whisked eggs
  • salt and pepper
  • 1 tbsp vegetable oil

Directions

  1. Pulse the cabbage in a food processor until it's in shredded finely. Add in the eggs, salt, pepper, and flaxseed meal.
  2. Heat the oil over medium high heat. Add the cabbage, about 1/4 cup per cake, and cook until edges are browned and firm. Flip and cook 2-3 minutes. Repeat for all cakes.
