This simple roasted vegetable dish is inspired by one of my favorite holiday dishes - mashed butternut squash with brown sugar.  However instead of mashing it, I decided to roast it with the brown sugar so it gets nice and caramelized on the outside.  I like to use this as a vegetarian main dish served but you could cut the serving size in half for a side dish.  Additionally I like to add either Cajun spices or fresh herbs to add even more flavor to the squash.

  • 6 cups butternut squash, peeled and cubed
  • 4 tsp. garlic, minced
  • 3 tbsp. brown sugar
  • 2 tbsp. olive oil
  • Salt and pepper

Directions

  1. Preheat the oven to 375 degrees. Arrange the butternut squash on a baking sheet or roasting pan.
  2. Heat the oil in a small sauté pan over medium heat. Add the garlic and sauté for 2-3 minutes until fragrant and tender. Remove from heat and add to a small bowl. Alternatively you can microwave the garlic and oil for 2 minutes to soften the garlic.
  3. Stir in the brown sugar and any spices you are using. Pour over squash and toss to coat.
  4. Bake for 30-35 minutes until butternut squash is roasted.
  5. Turn up the oven to broil. Broil for 3-5 minutes until sugar caramelizes on top.
