This simple roasted vegetable dish is inspired by one of my favorite holiday dishes - mashed butternut squash with brown sugar. However instead of mashing it, I decided to roast it with the brown sugar so it gets nice and caramelized on the outside. I like to use this as a vegetarian main dish served but you could cut the serving size in half for a side dish. Additionally I like to add either Cajun spices or fresh herbs to add even more flavor to the squash.

Brown Sugar Butternut Squash

Preheat the oven to 375 degrees. Arrange the butternut squash on a baking sheet or roasting pan.
Heat the oil in a small sauté pan over medium heat. Add the garlic and sauté for 2-3 minutes until fragrant and tender. Remove from heat and add to a small bowl. Alternatively you can microwave the garlic and oil for 2 minutes to soften the garlic.
Stir in the brown sugar and any spices you are using. Pour over squash and toss to coat.
Bake for 30-35 minutes until butternut squash is roasted.
Turn up the oven to broil. Broil for 3-5 minutes until sugar caramelizes on top.
