Breakfast Polenta with Spinach, Bacon, and an Egg

In a medium-high saute pan, saute your bacon until crispy. Remove the bacon from the pan and set aside. Leave the bacon grease in the pan to cook the rest of the ingredients and infuse them with bacon flavor.
Add onion and garlic to the pan, saute for 4-6 minutes until the onions begin to become translucent. Add the polenta cubes and cook for 4-6 minutes until cooked through and crispy on the outside. Season with salt and pepper.
Stir in the spinach and cook until wilted, usually about 1-2 minutes. Pour the polenta mixture into a side dish. Stir in the bacon.
In the same pan, add the 4 eggs and cook to your liking. I prefer my yolks runny for this recipe so it can break open and combine with all the other yummy ingredients. Enjoy!
