I wish I was one of those people who woke up on Sunday morning and couldn’t wait to make a big, delicious breakfast. Instead I am normally content with coffee and picking at things in the house until lunch time. However, this weekend I woke up in the mood to cook breakfast and wanted something savory. I had some polenta I wanted to use so I built a simple and quick recipe from that. I was really happy with the results and next time I may even add in some cheese. This would also make a great dinner or side dish without the eggs.

1

In a medium-high saute pan, saute your bacon until crispy. Remove the bacon from the pan and set aside. Leave the bacon grease in the pan to cook the rest of the ingredients and infuse them with bacon flavor.

2

Add onion and garlic to the pan, saute for 4-6 minutes until the onions begin to become translucent. Add the polenta cubes and cook for 4-6 minutes until cooked through and crispy on the outside. Season with salt and pepper.

3

Stir in the spinach and cook until wilted, usually about 1-2 minutes. Pour the polenta mixture into a side dish. Stir in the bacon.

4

In the same pan, add the 4 eggs and cook to your liking. I prefer my yolks runny for this recipe so it can break open and combine with all the other yummy ingredients. Enjoy!
