Relaxed weekend breakfasts are one of my favorite rituals. Multiple cups of coffee, a leisurely morning spent catching up on my favorite blogs and websites, a walk by the beach, all capped off with a delicious homemade breakfast. This past weekend even though I was only cooking for one, I decided to still whip up something special instead of my typical yogurt or oats for one. Inspired by the bruschetta I loved a few nights before, I made a simple breakfast bruschetta with a nice, runny egg. Perfect for one or for a crowd.
