Braised Spinach and Mushroom Tacos

In a large non stick skillet, bring the salsa verde to a slow boil and then turn the heat down to low.
Add the spinach and mushrooms and let cook for 30-35 minutes, stirring occasionally until the spinach and mushrooms are very tender.
Stir in the cheese and continue stirring until completely melted and incorporated into the sauce.
Taste and season with salt and pepper as needed. Serve as tacos or over brown rice. Add some fresh onions, cilantro, or diced jalapenos for some added texture.
