  • 2 tsp olive oil
  • 1 U onion, sliced into rings
  • 3 U garlic cloves, minced (or more)
  • 1/2 cup apple juice
  • 1 cup apple (peeled and chopped or shredded)
  • 2 tbsp red wine vinegar
  • 1 1/2 tbsp brown sugar
  • 1 U bay leaf
  • Salt and pepper
  • 4 cups red cabbage, shredded
  • 1/4 cup fresh parsley, chopped

Directions

  1. Add oil to large pot and add onions and garlic. Cook about 5 minutes.
  2. Dilute apple juice with 1/2 cup water. Add to onions along with apples, vinegar, sugar, bay leaf, salt and pepper. Mix well, bring to a boil and stir in cabbage.
  3. Cover and simmer 15-20 minutes until tender. Remove from heat, discard bay leaf and stir in parsley.
