For whatever reason I kind of hated French toast as a kid. It was never something we really ever ate at home and the idea of egg soaked soggy bread just didn't do it for me. Luckily, I grew up and realized what I was missing. Cinnamony, sugary, buttery goodness with bread. What's not to like? This lower calorie version is made with blueberries and a combination of eggs and egg whites. Since we are adding fruit, we can cut down on the sugar a but as well. Then to make things easier, it's baked all at once instead of needing to individually fry each slice. Yum.

Ingredients

  • 6 oz. French bread, cut into cubes
  • 3 U eggs
  • 1 U egg white
  • 1 cup light vanilla yogurt
  • 1/2 cup nonfat milk
  • 2 tbsp. brown sugar
  • 1 tsp. cinnamon
  • 2 tbsp. maple syrup
  • 1.5 cups blueberries
  • 1 U Pinch salt

Directions

  1. In a bowl whisk together the eggs, yogurt, milk, sugar, cinnamon, salt, and maple syrup.
  2. Lay the bread cubes out in an 8 X 8 baking dish. Toss in the blueberries.
  3. Pour the egg mixture over and toss so everything is well coated. Let sit overnight. (or at least one hour)
  4. Preheat the oven to 350 degrees.
  5. Bake for 45 minutes until golden brown.
