Am I the only one who just wants to eat tomatoes and fresh mozzarella the rest of the summer? Honestly every time I think about lunch, that’s all I want to eat. There is just something so delicious about the combination of fresh basil, ripe summer tomatoes, and mozzarella cheese that gets me every time. However to mix things up, I have been adding a touch of sweetness to my Caprese salads with some fresh summer fruit. So far I have tried peaches (recipe here), watermelon, nectarines, and blueberries. Right now I am seriously loving the blueberries. I wouldn’t judge either if you threw in some roasted corn or upgraded to a rich balsamic glaze to really make it special.

Ingredients

  • 1/4 cup fresh basil leaves, chopped
  • 2 tsp olive oil
  • 2 tsp balsamic vinegar
