Blackberry Granola Yogurt Parfaits come together in minutes but are pretty enough to serve at any fancy brunch or get together. But more often than not, you van find us enjoying them on a busy weekday since they can be made in minutes and keep you energized all morning.
This past weekend we had friends over for brunch and my big plans for prepping everything on Saturday never happened when we decided to take a family day at the beach. A decision I definitely don't regret. However that did leave me rushing around on Sunday trying to throw together a lovely brunch spread in about an hour. To keep things quick and easy, I tossed this frittata in the oven, ran to the local bakery for some fresh bread and pastries, and tossed together these yogurt parfaits. I used homemade granola I had already made but store bought would work great as well. And to my surprise, these parfaits were the first to go.
Blackberry Granola Yogurt Parfaits

- 1 cup blackberries
- 3/4 cup nonfat plain Greek yogurt
- 1/4 cup low fat granola
- 1 tsp. flaxseed meal
- 1 tsp. honey
- 1/4 tsp. cinnamon
- 1/4 tsp. vanilla extract

Stir the honey, flaxseed meal, vanilla extract, and cinnamon into the yogurt.
Layer one third of the blackberries in the bottom of a glass or bowl. Add half the yogurt. Layer in half the granola and more blackberries. Then top with another layer of yogurt, granola, and blackberries.
