So I have been reading about black bean brownies for the past couple years and wasn’t brave enough to try them until today and I am happy to report they are pretty great, not quite like a typical brownie, but delicious. Simple, fudgy, chocolaty and without any hint of black beans, which is clearly a positive in this recipe.

  • 14.5 oz canned black beans
  • 18.5 oz brownie mix
  • 2 tsp instant coffee

Instructions

  1. Rinse the black beans off well in a colander and return to the rinsed can. Fill the can with water to the top. Pour mixture into a blender and blend until smooth.
  2. In a large mixing bowl, mix the brownie mix, instant coffee, and black bean puree until well mixed.
  3. Follow the cooking instructions on the brownie box. Let cool and cut into 16 servings.
