These pancakes are a favorite among many dieters, especially folks following a Paleo or clean eating plan. They can be made with as few as two ingredients, although I like to add a touch of baking powder to make them fluffier and some cinnamon and vanilla for added flavor. Add chocolate chips, blueberries, strawberries, nuts, chia seeds, flax seeds, or peanut butter to mix up the flavor and create something completely your own. They also keep well and can be kept in the fridge for 4-5 days or frozen for later use.

Banana Egg Pancakes

Mash the bananas well. Stir in the eggs, egg whites, baking powder, cinnamon, and vanilla. You can also blend quickly in a blender for a smoother, more crepe like pancake.
Spray a nonstick skillet with cooking spray and heat over medium heat.
Use around ¼ cup per pancake. Flip once edges cook through.
