This is probably my favorite vegetarian meals of all time. It is so incredibly comforting and you will never believe that it has less than 300 calories. If you don't like goat cheese, just substitute in any cheese you like. Mozzarella, Parmesan, feta -almost anything will work.

Ingredients

US METRICS
  • 3 cups water
  • 1 cup polenta
  • 1 tsp. salt
  • 1 tbsp. butter
  • 12 oz. marinara sauce
  • 8 oz. sliced mushrooms
  • 1/2 cup crumbled goat cheese

Preheat the oven to 350 degrees.

Add the water and salt to a pot and bring to a rolling boil. Whisk in the cornmeal and reduce the heat to a simmer. Continue stirring as it becomes very thick. After five minutes add the butter and stir in until melted.

Pour the polenta into a small casserole dish. Top with the mushrooms, marinara sauce, and sprinkle with cheese.

Cover with aluminum foil and bake for 30-45 minutes.
