Turn your oven up to 500 degrees. You could use the broiler, but the fish cooks more evenly on a rack in the oven.
In a ziploc bag or in a food processor, crush the ritz crackers into small breadcrumb like pieces. Then mix the ritz crackers with butter, parsley, and lemon juice in a small bowl. This creates the stuffing for the baked fish.
Salt and pepper your fish and then press the stuffing on top. Place in the oven on a shallow baking dish for 5-7 minutes. The fish is ready when it flakes away. For a thinner fish, you may not need to cook for as long.
