Looking for a healthy Meatless Monday meal? Consider whipping up this quick and easy pasta dish with cannellini beans and kale. It comes together from start to finish in just about 20 minutes and is a meal you can feel good about feeding your family. Consider adding red pepper flakes if you like things spicy. A can of diced tomatoes would also be a great addition.

  • 8 oz. high fiber angel hair pasta
  • 1 tsp. olive oil
  • 2 U garlic cloves, minced
  • 4 cups kale, chopped
  • 14 oz. can white beans, drained and rinsed
  • 1 cup vegetable broth
  • 1/2 cup Parmesan cheese
  • 1 U Juice of 1 lemon

Directions

  1. Cook the pasta according to package instructions.
  2. Meanwhile add the olive oil to a pan. Add the kale and garlic. Cook for 3 minutes.
  3. Add the beans and vegetable broth and scrape up any browned bits in the pan. Cover and cook for 6-8 minutes until kale is tender.
  4. Add pasta to the pan and stir together. Top with Parmesan cheese and lemon juice.
