Chili is one of those dishes that I love making. There is just something soothing about standing over a pot of hearty, warming, filling chili. However sometimes there just isn't time for two or more hours of chili making and on those days, I make this simple thirty minute chili. It's packed with flavor without all the fuss of more complex chili recipes. Like many chilis, this tastes even better the next day so make it ahead of time if you can.

Ingredients

  • 1/2 tbsp olive oil
  • 1/2 U onion, minced
  • 2 U cloves garlic, minced
  • 1 U poblano pepper, seeded and diced
  • 1 lb 95% lean ground beef
  • 14 oz canned pinto beans, rinsed and drained
  • 1/2 cup quinoa
  • 1 cup beef broth
  • 2 cups water
  • 2 tsp chili powder or to taste
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 14 oz fire roasted canned diced tomatoes

Directions

  1. Heat the olive oil in a large pot and add the onion, garlic, and poblano pepper. Once fragrant after 2-3 minutes, add the beef and brown until no longer pink. Season with salt and pepper.
  2. Add the remaining ingredients and simmer for 20 minutes. Taste and season if needed.
