Healthy Meal Plans: Week 41

This week's healthy meal plan is packed with fall inspired recipes like Turkey Apple Burgers, Slow Cooker Beef Ragu, Roasted Root Vegetables, and Microwave Pumpkin Oatmeal.

I am so ready for fall and this week I am adding lots of fall inspired recipes to get in the mood bringing in pumpkin, apples, roasted veggies, and more.

Now on to this week's meal plan! This week kicks off with a delicious Italian Frittata, Spinach Artichoke Quesadillas, and a Slow Cooker Beef Ragu for dinner. Monday brings Roasted Vegetables with Orzo and Tuesday is Easy Spicy BBQ Chicken Thighs. Mid-week meals include Roasted Shrimp and Broccoli and Crispy Pork. Finally, to end the week, there are delicious Turkey Apple Burgers and Sweet Chili Coconut Chicken Fingers.

Turkey Apple Burgers: These fall inspired turkey burgers with sage and green apple get me in the mood for all the amazing fall food coming up.

Slow Cooker Beef Ragu: This is one of my favorite slow cooker recipes for cold weather. The beef melts in your mouth and seriously couldn't be more delicious.

Garlic Parmesan Shrimp: This meal can rival any restaurant steak and the chimichurri sauce makes it something special.

Microwave Pumpkin Oatmeal: This lightened up version of spaghetti and meatballs includes all the same great flavors but is served with spaghetti squash for a healthier spin.
