This time of year I find sticking to a meal plan can be a bit harder, which seems counter intuitive with summer on the horizon. Normally I would think that bathing suit weather would motivate me, but I think something about the freedom of summer and thoughts of barbecues, beach days, and lazy summer days can do just the opposite. That means I will need to push a little harder this week and really focus on making good decisions and sticking to my plan. Does this happen to you? How do you stay focused through the warmer months?
Now let's talk about this week's plan! It starts out with Zucchini Tomato and Corn Frittata, Chipotle Mushroom and Spinach Quesadillas, and Slow Cooker Greek Chicken and Green Beans. Monday brings Creamy Pesto Zucchini Pasta with Chicken and Tuesday is Turkey Taco Lettuce Wraps. Wednesday is One Pan Lemon Garlic Chicken and Asparagus and Thursday is Coconut Crusted Salmon. To end the week, meals include Zucchini Burgers and One Pan Sausage with Sweet Potatoes and Green Beans.

Every week I like to share highlights form the Slender Kitchen meal plans. I believe meal planning is critical to any long term and effective healthy living or weight loss goals. For me it was the single thing that finally made permanent weight loss achievable. The quote stood true, when I failed to plan, I failed, and I don’t want that to happen to others.
Additionally, I believe that meal planning is a skill that takes time to master and we can all use some help! It was painful. Anything I can do to ease that pain for someone else is a win-win in my book.
