This week I was craving lots of comforting dishes when creating this week's meal plan. For me that means tacos, Asian take-out at home, a classic comfort food dish, and Chicken Parm. Luckily I was able to incorporate healthier versions of all those dishes to create a menu I can't wait to dig into and one that I can feel good about eating.
With that, let's take a look at some of the dishes in this week's meal plan. It starts one of my favorite make ahead breakfasts - Sweet Potato and Spinach Egg Muffins. Lunch is a Spinach Artichoke Quesadillas (yum!) and Slow Cooker Carnitas Tacos for dinner. Monday is a lightened up version of a classic, Chicken Parmesan served with spaghetti squash and Tuesday is a Shortcut Shepard's Pie. On Wednesday it's a simple but tasty Rosemary Pork Chop recipe and Thursday is a sweet and spicy Bang Bang Chicken. To wrap up the week, Friday is quick and easy Baked "Fried" Fish and Saturday is an Andouille Sausage, Kale, and Root Vegetable Bake.

Every week I like to share highlights form the Slender Kitchen meal plans. I believe meal planning is critical to any long term and effective healthy living or weight loss goals.
