Labor Day weekend really snuck up on me this year. It seems much too soon for kids to head back to school, cooler weather to roll in, and summer to finish up. Although a part of me (maybe more than a part) is actually pretty excited about fall. I have actually had this salad three times since seeing it last week on Vegan Cooking, a great website full of vegan recipes for vegans and anyone wanting a more plant based diet. Since beet greens are normally something I throw into the trash, I was excited to try out a recipe that used them. The blend of the golden beets, red beets, avocado, and lemon tahini dressing is delicious. Perfect for summer.
