Five Healthy Breakfast Egg Mugs

Yesterday in the meal planning post I talked about how important having a breakfast routine is for me and some of my favorite recipes to include in my weekly meal plan.  Many folks reached out wanting to learn about specifically about egg mugs and different ways to make quick and easy eggs in the microwave for a healthy breakfast.  Today I am going to share some of my very favorite egg mug recipes as well as the basic recipe for egg mugs so you can make your own creations at home.

Basic Egg Mug: Spray a large mug or bowl with cooking spray.   Add 2-3 eggs or egg whites and quickly whisk together.  Microwave on high for 45 seconds.  Stir the eggs and microwave again for 30-60 seconds unitl egg is fluffy and fully cooked.  The exact cooking time will depend on your microwave.   Now let's talk toppings for a second.  For veggies, microwave them until tender first before adding the eggs.  For example, if you are going to use spinach, quickly microwave it first for about 30 seconds and then stir in the eggs.  For toppings like cheese, salsa, pre-cooked meats, or pre-cooked veggies, you can stir them right into the eggs  before cooking.  Depending on how many toppings you add, you may have to add 15-30 seconds of extra cooking time.
