Lately I have been on a bit of a muffin kick - meaning that I am happy to eat muffins for breakfast, snacks, and desserts almost every day. It's dangerous to have too many muffins in the house, and with only two people in the house, it is easy to eat them all the time any time I bake them. Here are my favorite muffin recipes spanning savory and sweet.
1. Red Pepper and Feta Muffins: 2 P+
These might be my favorite muffins of all time when I want something savory. They are a little reminiscent of a Greek salad with the red pepper, feta, and oregano. Lately I have been including olives as well when I make this recipe - yum. I love these with a salad or soup, or for a quick snack. They are also delicious alongside eggs and other savory breakfast dishes.
2. Banana Nut Dark Chocolate Muffins: 5 P+
Last week, Danica from Danica's Daily, posted a delicious recipe for Banana Nut Dark Chocolate Bread, which I used this week to make muffins. I tend to prefer muffins because I get built in portion control so I followed the recipe exactly and just poured it into a muffin tray instead. They definitely bake up quicker, so keep an eye on them. I recommend splurging on a great dark chocolate for the recipe, so the chocolate really comes through.
3. Pumpkin Muffins: 2 P+
With the fall upon, I just can't get enough of any pumpkin recipe, and this one doesn't fail to impress, especially for only 2 points. They are also incredibly simple to make and just require a box of spice cake, a can of pumpkin, and a cup of water. I was worried the first time I made them that they might lack flavor, but they were great. Toasted with a little butter or cream cheese, and it is a perfect way to start the day.
4. Lasagna Cupcakes: 3 P+
So although these don't quite qualify as a muffin, they look the same and are eaten the same, so I am going to include them as well because they I love them so much. They layer delicious lasagna flavors in wonton wrappers and bake up into delicious little magical lasagna muffins, or cupcakes, you choose. Change up the vegetables, cheeses, or add meat, and you have endless combinations. They also definitely impress at at a party.
5. Blueberry Streusel Muffins: 6 P+
When I want a real deal, blueberry muffin with the delicious streusel topping, this is the recipe I run to. The streusel is delicious and exactly what you want with a blueberry muffin. I followed a user's recommendation when I made the recipe and used 1/4 c real sour cream and 1/2 cup 0% greek yogurt in place of the 3/4 cup sour cream. I have also made this with other berries and it has come out great.
