There are few things I love better than a really good taco, and some of my favorites come from the crock pot, which makes me love them even more. Throw some ingredients into the crock pot and come home hours later to a delicious meal. What’s also great about these recipes is that they are meals that keep on giving. Have them for tacos one meal, a burrito the next, over rice or greens, or even as a topping for baked nachos. Here are some of my favorite taco recipes for the crock pot. Please share yours as well!
1. Crock Pot Beef Barbacoa: : 4 P+
These delicious beef tacos start with a quick sauce of chipotles, chicken broth, cumin, oregano, onion, garlic, and lime juice and then cook slowly all day in the crock pot. The result is tender, shredded beef with just the right amount of spice. Top with some chopped cilantro and onion to add a little crunch, or make your own at home burrito bowl.
2. Crock Pot Chili Chicken Tacos: 5 P+
This simple Martha Stewart chili chicken taco recipe couldn’t be simpler and uses chipotles, jarred tomato salsa, and chicken thighs. I love them with the hard shell tacos she recommends, but bake mine instead. Just warm the tortilla slighty in the microwave so they won’t break, spray with a little cooking spray, and drape over the oven rack to create your own crispy shell. Bake at 450 degrees for 5-7 minutes.
3. Cochinita Pibil: 4 P+
This taco recipe combines achiote, a Mexican spice blend, with orange and lime juice, to create a flavorful and spicy pork taco. This recipe is great to tacos and burritos, but also can make a fun and interesting substitute for pulled pork and is great in sandwiches.
4. Vegetarian Lentil Taco “Meat Filling”: 2 P+
I wanted to make sure to include at least one vegetarian taco recipe and I love this simple lentil recipe to create a vegetarian meat filling. Sometimes I add in some cubed butternut squash as well to add some color and texture as well. It will please both meat eaters and vegetarians.
5. Crock Pot Korean Beef Tacos: 5 P+
Although the first time I had these was this week, they are quickly growing to be one of my favorites and I am already planning on trying the same recipe with chicken thighs. The blend of spicy and sweet is delicious and the meat only got more flavorful over the next couple of days. A great twist on a traditional taco.
