Back-to-school season is when I stop winging dinner quite so much and start leaning hard on recipes I know can handle a packed week. I want meals that are straightforward to make, filling enough for dinner, and flexible enough that everyone at the table can find something they’re happy to eat.
Some nights that means throwing chicken and vegetables onto one sheet pan. Other nights I’m reaching for taco bowls, a big skillet of pasta, or something I started in the slow cooker hours earlier. I’m also a huge fan of dinners that give me useful leftovers for lunch, so I don’t even have to think about what to eat the next day!
These are 30 of my favorite healthy back-to-school dinners for exactly those nights. You’ll find quick chicken dinners, pasta, tacos, rice bowls, casseroles, slow cooker meals, and plenty of vegetables mixed right into the main dish. Tips for Making Back-to-School Dinners Easier
A little planning at the beginning of the week can make these recipes even more useful. I’m not talking about spending all Sunday cooking twelve identical containers of chicken and broccoli either!
- Choose a few anchor dinners: Pick two or three meals you know you can realistically make that week, then leave a little flexibility for leftovers or plans that change.
- Prep components instead of full meals: Cook rice, chop vegetables, wash greens, mix sauces, or shred cheese ahead of time. You’ll still get a freshly cooked dinner with a lot less work.
- Use ingredients more than once: Buy ingredients that can move between meals. Rice can work with taco bowls and teriyaki chicken, while peppers can go into fajitas, pasta, bowls, or casseroles.
- Keep a fast backup dinner: A 20-minute pasta, ground meat stir-fry, or taco casserole can rescue the nights when the original dinner plan falls apart.
- Make toppings work harder: Salsa, avocado, shredded cheese, Greek yogurt, chopped herbs, and pickled onions can freshen up bowls, tacos, casseroles, and leftovers throughout the week.
- Plan one meal specifically for leftovers: Slow cooker chicken, casseroles, and grain bowls are especially helpful when you know the next day’s lunch also needs to be handled.
Frequently Asked Questions
Here are some of the most commonly asked questions about choosing healthy back-to-school dinners:
What Back-to-School Dinners Can I Make Ahead?
Slow Cooker Pulled Chicken, Healthy Taco Casserole, Mediterranean Bowls, and Teriyaki Chicken Quinoa Bowls are all strong options.
You can make the entire recipe ahead or prep individual components so dinner only needs reheating or quick assembly later.
What Healthy Dinners Can I Make in 30 Minutes or Less?
Try Ground Beef Bulgogi Bowls, Chicken Kofta Bowls, Easy High Protein Pasta, Spicy Ground Turkey and Green Bean Stir-Fry, or Tomato Basil Chicken.
They’re all quick enough for nights when dinner didn’t get started quite as early as planned.
What Are Good Back-to-School Dinners for Picky Eaters?
Build-your-own meals are usually my first choice. Chicken Taco Bowls, Sheet Pan Chicken Fajitas, and Healthy Crunchwrap Supreme let everyone decide what toppings actually make it onto their plate.
Chicken Parmesan, taco pasta, and teriyaki chicken also use familiar flavors that tend to work well for families.
Which Back-to-School Dinners Are Best for Leftovers?
Slow cooker shredded chicken, taco casserole, pasta, and meal-prep bowls are some of my favorites because they’re easy to turn into lunch the next day.
Use leftover chicken in wraps or tacos, pack extra bowls as-is, or add fresh vegetables and greens to leftover pasta or casseroles to change things up.
