Zucchini Pepperoni Pizza

After Friday’s Pizza post, I went on a little pizza crazy over the week and ate some kind of pizza at every meal. One of my favorites is this simple zucchini pizza that comes in at only 1 points per serving. It totally hits the spots and makes a great snack or lunch. I had mine with a bowl of tomato soup and was completely satisfied.

Zucchini Pepperoni Pizza
Servings: 4
Serving Size: 1 pizza
Nutritional Info: 57.1 calories, 2.4g of fat, 4.7g of carbohydrates, 1g of fiber, 4.2g of protein * 1 P+

Ingredients

  • 1 large zucchini, cut in fourths length wise
  • 4 tablespoons of your favorite low point sauce (I like Eden Organic, which is only 1 point per 1/2 cup)
  • 4 tablespoons part skim mozzarella cheese
  • 12 turkey pepperonis
  • Salt and pepper
  • Oregano

Instructions

  1. Preheat your oven to 400 degrees.
  2. Cut the zucchini into fourths lengthwise and then sprinkle with salt, pepper, and oregano. Place on a piece of tin foil or small baking sheet and bake for about 15 minutes.
  3. Take the zucchini out of the oven and add the 1 tbsp sauce, 1 tbsp cheese, and 3 pepperonis to each zucchini along with any additional toppings your choose. Make sure to account for any additional points if you choose ingredients with a pointsplus value greater than 0.
  4. Return the pizza to the oven and bake for an additional 10-15 minutes until the cheese begins to bubble on the top.

    These were really good:) I found that the slices that were slightly thinner fell apart, so I may slice them in 3 pieces instead I’d 4 next time. I used mini pepperonis, which fit a little better.

    I found a similar “low-carb” recipe for zucchini pizza a few months back that I adapted to make more WW friendly, It used the round ball zucchini’s which are hard to find. (at least where I live)

    I have made this (which is essentially the same recipe as mine) several times, but I do it on my outside bbq grill… grill the zucchini then add toppings.

    YUM!

    P.S. My brother loves this recipe as he is doing Adkins. Except he uses full fat cheese & pepperoni because he doesn’t care about the fat. I love how it is adaptable to your own dietary needs. :)

    These are amazing! I can’t believe how delicious they are. The pepperoni is a must because it gives them that true “pizza” taste. I can’t wait to try other toppings though. They also totally filled me up.

    I had these today for lunch and loved them! The ‘pizza’ along with a salad was very filling plus got in some of my WW veggies for the day. I calculated my own points since I used a different pizza sauce (I found Contadina’s Pizza Squeeze at Walmart which is 1 point+ for 1/4 cup), and had 4 turkey pepperonis on each slice (yum), and it still worked out to 1 point+ each. I came across your website looking for nutritious and delicious WW recipes and am looking forward to trying many more over the upcoming weeks. Thank you!
