Zucchini Beef Burgers

In today’s edition of “hide the vegetables” we trick our meat loving friends into indulging in a zucchini laden beef burger…

One of my favorite requests is from folks looking to find secret ways to “hide” veggies to help unsuspecting “veggie haters” get more greens in their diet. One way I love to do this is with pasta sauce – like this Cauliflower Alfredo or Carrot Mac and Cheese – and burgers can be a surprisingly easy place to hide veggies. In this recipe we are going to add lots of shredded zucchini to our burger meat and impart some great flavors with spices so that the zucchini will go virtually undetected. Once you layer it into a hearty roll and load it up with condiments, no one will be wise to the fact that they are eating their veggies too.

Ingredients

    1 lb, zucchini
  • 1 lb. 95% lean ground beef
  • 1/4 cup breadcrumbs (replace with 1 egg white or flaxseed meal for low carb/paleo/gluten free)
  • 1 clove garlic, minced
  • 1/4 cup onion, minced
  • 3/4 tsp. pepper
  • 1/2 tsp. paprika
  • 1/2 tsp. onion powder
  • 1/2 tsp. ground mustard (if you have it)
  • Pinch cayenne or chili pepper
  • 2 tsp. olive oil
  • Salt

Instructions

  1. This step is extremely important. Use a box grater to shred your zucchini. Then using a cheesecloth, clean towel, or paper towels – squeeze the zucchini until you remove most of the moisture. You will be shocked at how much water comes out. The more you can squeeze out, the better the burgers will come out. I recommend squeezing it out in batches since smaller bunches are easier.
  2. Mix together the shredded zucchini, beef, and remaining ingredients. Form into 6 patties.
  3. Brush the burgers with olive oil and then season with salt on both sides.
  4. Cook in a medium hot skillet for 4-5 minutes per side or grill.
