I am always on the lookout for great sweet potato recipes since they not only taste delicious but are full of carotenoids, vitamin C, potassium, and fiber, all which are great for your health. I stole this mashed sweet potato recipe from a friend after having it on Christmas Eve. It was easily the most popular side dish served. Most mashed sweet potato recipes I come across have a lot of butter and brown sugar, but this one is a little more savory and adds in creamy goat cheese, fresh chives, and parsley. I also think this recipe would be great with butter nut squash, and then it would only be 1 point per serving – haven’t tried it yet, but let us know if you do!
Weight Watchers Sweet Potato Mash
Points: 3 Weight Watchers PointsPlus
Servings: 6
Serving Size: 1/2 cup
Nutritional Info: 112.6 calories, 4.1 g of fat, 16.3 g carbohydrates, 2 g dietary fiber, 2.9 g of protein
Ingredients
2 large sweet potatoes, peeled and chopped
1 tbsp butter
1/2 cup of soft goat cheese
3-4 chives thinly sliced (you could also use 1-2 green onions)
1/8 cup fresh chopped parsley
1/4 non fat chicken stock (if needed)
Salt and freshly ground pepper
Instructions
1. Bring a large pot of water to a rolling boil. Add your sweet potatoes and boil under fork tender. Drain the water and return the potatoes to the pot.
2. Add the chives, butter, goat cheese, parsley, salt, and pepper. Mash to the desired texture with either a hand masher or a mixer. I prefer mine with a little bit of texture so I use a hand masher. Serve warm!
Tip: You can easily double or triple this recipe and freeze the leftovers. When you are ready to eat, defrost and warm up in the microwave or a small pot.

Never thought about pairing sweet potatoes and goat cheese, but I love them both! Definitely going to try these out!
