Sweet Chili Chicken Salad

It’s getting hot and the idea of turning on my stove during the day is becoming less and less appealing. That means lots of salads for lunch utilizing leftover protein from other meals. Yesterday I was craving something sweet and spicy so I decided to create a simple salad using sweet chili sauce and peanut butter in the dressing. The result was sweet and spicy, just was I was looking for. Rounded out with some crunchy vegetables, a touch of cilantro, and some extra protein from the edamame and peanuts and it makes a delicious lunch or dinner. Also for those of you who dine at Panera frequently, you may recognize this as an adaptation of their Thai Chicken Salad.

Sweet Chili Chicken Salad
Servings: 2 servings
Serving Size: 1/2 recipe

  • 1 tbsp. sweet chili sauce
  • 1 tbsp. rice wine vinegar
  • 1/2 tbsp. soy sauce
  • 1 tbsp. reduced fat peanut butter
  • Juice of 1 lime
  • 6 oz. leftover grilled or shredded chicken
  • 1/2 cup shelled edamame (mine were fire roasted from TJ’s)
  • 2 tbsp. cilantro, chopped
  • 1/4 cup shredded carrots
  • 1/2 cup shredded purple cabbage
  • 4 cups romaine lettuce
  • 1 tbsp. chopped peanuts
  • 2-4 tbsp. green onions, chopped
  • Salt and pepper


  1. Whisk together the sweet chili sauce, rice wine vinegar, soy sauce, and lime juice to make the dressing.
  2. Toss together all the remaining ingredients and top with dressing. Season with salt and pepper.

    What is sweet chili sauce? Could you recommend a brand? Thanks

      Thai Kitchen makes one that is pretty readily available. Also Trader Joe’s makes one and I buy an Asian brand called Mae Ploy.
