Sweet and Spicy Pizza Puffs

In my opinion no Superbowl spread is complete without some type of pizza. It should be cheesy and delicious and somehow not ruin my diet. Sound impossible? Well thanks to a delicious recipe from Danica, over at Danica’s Daily, it is possible to enjoy pizza without all the calories. Adapt the recipe to include any of your favorite toppings. I opted for pepperoni, pineapple, and jalapenos – but any combination you like would work. You can also make these as mini muffins and they are just 1 point per puff. Yum.

Weight Watchers Sweet and Spicy Pizza Puffs
Points: 2 points plus
Servings: 12 servings
Serving Size: 1 muffin
Nutritional Info: 71.8 calories, 2.8g of fat, 7.2g of carbohydrates, 1g of fiber, 4.9g of protein

Ingredients

  • 3/4 cup whole wheat flour
  • 3/4 tsp. baking powder
  • 1 tbsp. Italian seasoning
  • 1 tsp. crushed red pepper flakes
  • Salt and pepper to taste
  • 3/4 cup skim milk
  • 2 egg whites, lightly beaten
  • 1 cup shredded part skim mozzarella cheese
  • 1/8 lb. pepperoni, diced
  • 1/3 cup diced pineapple
  • 1-2 jalapenos, seeds removed and diced

Instructions

  1. Preheat the oven to 375 degrees.
  2. Whisk together the flour, baking powder, Italian seasoning, red pepper flakes, salt, and pepper. Add the skim milk and egg whites and stir together. Fold in the mozzarella and let rest for 10 minutes.
  3. Fold in the pepperoni, pineapple, and jalapenos.
  4. Pour into a muffin tin sprayed with cooking spray and bake for 27-35 minutes until cooked through completely. Serve with marinara sauce.

    What size is the muffin? mini or regular?
