Sunday Slow Cooker:  Spicy Corn and Kale Soup

Originally I never intended to share today’s recipe on the blog. I have been on a mission lately to clean out my pantry. The result is almost always some type of soup and although good, none have been special enough to photograph and share. However this soup was different. I was surprised by how much I loved the simple combination of tomatoes, spice, and corn. I added some kale because I had it on hand, but you could add any veggies, beans, or protein to mix things up.

Slow Cooker Spicy Corn and Kale Soup
Servings: 6
Serving Size: 1 cup
Nutritional Information: 163 calories, 1.8g of fat, 29.9g of carbohydrates, 3.7g of fiber, 7g of protein, 9g of sugar

Ingredients

  • 14.5 oz. crushed fire roasted tomatoes
  • 4 cups vegetable broth
  • 1 jalapeno, seeded and minced
  • 4 oz. can green chiles
  • 10 oz. can creamed corn
  • 10 oz. can corn (or defrosted frozen corn)
  • 1 onion, minced
  • 4 cloves garlic, minced
  • 1 bay leaf
  • 2 tsp. cumin
  • 2 tsp. oregano
  • Up to 2 tsp. chili powder
  • Salt and pepper
  • 4 cups kale
  • Optional: For a creamy version add 1/2 cup half and half or sour cream

Instructions

  1. Add everything to the slow cooker. Cook for 4 hours.

    I’m so happy to have found this recipe today! A friend gave me some kale,jalapenos and cilantro yesterday that needed to be used pretty soon. I was kind of at a loss as how to best use them all. Then I saw this;) I’m going to varnish with cilantro or maybe make a cilantro lime cream. Not sure yet. Thanks so much for sharing this recipe, I love to make, what we call Thursday Night soup, which means cleaning out the pantry plus any leftovers from the week. It’s never been the same way twice but its always good.
